Falafel mix is such a versatile staple to have in the refrigerator. Falafel goes great in wraps, as a side dish for a barbeque or can be served alongside salads and hummus for a light summer meal.

 ½ cup falafel mix
 35 tbsp water
 500 ml canola oil
 ½ tsp baking powder
1

Pour ½ cup of falafel mix into a bowl and mix with ½ teaspoon of baking powder.

2

Slowly add water one tablespoon at a time to falafel mix and combine until it reaches your desired consistency. The more water you add the softer your falafel mix will be.

3

Half fill a saucepan with cooking oil and turn it on until the oil is simmering lightly.

4

Using a tablespoon or a falafel patty maker, add scoops of falafel mixture into the simmering oil.

5

Cook 5-6 falafels until golden brown on both sides. Once cooked remove from pan.

6

Cover with tahini sauce and serve with a fresh salad.
