Pita Bread French Toast

Mother's Day and breakfast in bed go hand in hand. This year, why not spoil mum with this delicious Pita Bread French Toast. Pita bread is a pantry staple for us, and it's no wonder why. They really can be used for breakfast, lunch, dinner and everything in between. This recipe takes classic French toast and steps it up a notch by placing berries inside the pita bread for a delicious and gooey berry surprise.

 3 eggs
 200 g milk
 1 tbsp cinnamon
 1 pinch salt
 4 Alamir Bakery pita breads
 2 cups berries (fresh or frozen) macerated in 1/4 cup icing sugar
 2 tbsp oil for cooking
 8 rashes of bacon
To Serve
 Macerated berry juice
 Greek yoghurt

Preheat oven to 220c. In a bowl, whisk eggs, sugar, milk, cinnamon, and salt.

Sprinkle berries with 1/4 cup icing sugar and allow them to macerate.

Make a small incision in the pita bread. Spoon 2 tablespoons of berries into the pita bread.

Dip the pita bread into the bowl containing the egg mixture. Let it soak for 5 minutes

Place a frying pan on the stove on medium heat. Add some olive oil. Fry each pita bread for 5 minutes on one side before flipping. Pita bread should be golden and cooked through.

Place the pita bread into the oven to cook for another 10 minutes.

Fry the bacon over high heat until golden and crispy.

Serve the pita bread with some extra berries, a drizzle of the macerated berry juice and a spoonful of Greek yoghurt.
